This summer I have been so crazy for salads,  "I'm like I had a salad for lunch" my friends say "Oh that's new" No, but seriously I never new salads could be this good, maybe it's because I make them so pretty, I just want to eat them!  



So yes, the picture is the same, but I added cheese, I love food pictures!

The dressing that I used today was rosemary vinaigrette, another one of my new obsessions, salad dressing.  So, good! I will post the dressing later.

For this salad you will need:
  • fresh leaf lettuce
  • grilled chicken(I marinade my own and grill one side until it's blackened,OMG!) I like spice, so buffalo style!
  • strawberries(about 4,sliced)
  • blueberries(a small handful)
  • sweet onion(as much as you like, I like tons!)
  • fresh broccoli
  • pecans or nut of choice(Go for the pecans, a little sweet and smooth tasting)
  • monterey jack( as much or as little as you like)
Salads are made to order, so choose ingredients that you enjoy, that's what makes a great salad!

Pickles with a kick



So I've been told these pickles are a cross between dill and sweet with a kick at the end! Very simple and easy to make, the best part is you can eat them as soon as they are done, of course the longer they sit the more tastier, if they last that long!

 












                                     















Always sterilize your jar and lid, you probably know this, but just in case;)

You will need:
  • 1 seedless cucumber(For one mason jar you will use half the cucumber)
  • 2 garlic cloves, sliced
  • small sweet onion, sliced(I use about half)
  • dill, a few sprigs
  • peppercorns
  • hot pepper flakes, just a pinch
  • sugar(about a tablespoon)
  • 1/2 cup water(maybe a little more)
  • 1/2 cup white vinegar(maybe a little more) You want your jar to have enough juice.
  • salt, whatever you have on hand, a couple pinches

I usually don't measure out ingredients, so add more or less of any of the ingredients for your own taste buds.  My family loves a little of sweetness and spice, My favorite!!  Enjoy!
